Today is a great day. Why? Well, today is the day I have perfected my oatmeal raisin recipe and I will also share it with you.
(If you dont give a shit about cookies, ship down to the last paragraph...)
Oatmeal raisin cookies
Oven: 175°
Ingredients:
75g butter
1 dl sugar
1.5 dl oatmeal
1 dl flour
1 teaspoon baking powder
1/2 dl raisins
Do like with all cookies and mix together butter and sugar first. Mix the baking powder into the flour before adding it so it gets more eavenly spread, other than that just basically mix it all together, and then the raisins last. Roll/squeeze them together into 12-15 little dough lumps and then press them out on a tray wiht baking paper on it with a fork... or your fingers if that doesn't work. They will do their best to fall apart at this stage. Bake them at 175° for 15-20 minutes, they don't change shape much in the oven.
Awesome, right? I made them this morning along with some other ones, which I cal maple cuts, becaue I have no idea how to translate it. In the swedish recipie there isn't even maple sirup in it, because here you can buy a special type of baking sirup...
Either way, while I'm at it:
Toffee cuts
Oven: 175°
Ingredients:
100g butter
1 dl sugar
1 tablespoon vanilla sugar or extract
1 tablespoon maple sirup or toffee sauce for ice cream
2.5 dl flour
1 teaspoon baking powder
Mix it all together, butter and sugar first and then the rest. Form them into 3 lengths which you flatten into about 0.5 cm thickness. They should be 2-3 cm wide, more if you want, but they float out.
Bake for about 10 mins, less if they're looking brown. When you take them out they are soft. Cut diagonally, to make 1-3 cm wide cookies. Wait until they aren't soft anymore before you move them, or else they will break. They should be a bit chewy even once they've cooled.
So yeah, think of me if you ever make them. I made them both paralelly in about 45 minutes, so they shoudln't take too long. What was harder was to clean the kitchen first, that took like 2 hours.
Now Im going grocery shopping with my mom because were having some friends over for dinner tonight. Friends of the family, and a friend of mine is coming who Ive known since kindergarden. He visited me in Basel once and left an impression on my friends (everytime I talk about him, Hannah says: "that hot boy who came to visit you once?".. haha). Yeah, Im saying that to cause some jealousy. Id never do anything with him though, friend zone all the way, and not that kind of friend.
And it seems Im hanging out with David tomorrow. I got to know him at the confirmation camp and somehow stayed in contact with him. Funny how I dont talk much to anyone from my camp, while Im friends with him who was actually on an other camp on the same island. This other girl was so pissed off that I was friends with an older boy and she wasnt. I still kindof think about the confirmation camp, I mean, I thought it was horrible while I was there, but I guess I learned a lot: we read about what we shoudln't do and then we tried it out, basically. But the priest was cool, he swore even more than me and said that as long as youre not married you can do whatever you want with anyone you want, male or female. He had this dog toy which he squeeked when he wanted us to pay attention... we just started laughing. I don't know why I keep coming back to theese 3 weeks, I guess its just one out of few concrete memories of sweden which dont involve my horse, thats just hurtful to think about. For those of you who dont know, I had a horse and he meanth more to me than anything, and we sold him a few months back. I guess Ill come back to that once Im more over it.
Anyways, guess my moms ready to go out now, so Ill write more later.
